How about user created Environment maps? I see they're .FFENV. Any chance of a util to create these or easing up on proprietary formats by letting us import JPGs/PNGs/etc.?

You can import your own environments:
In the main menu, select Tools > HDRI Import...

Any chance the final version will contain more selection from the enviroment maps so people dont have to worry about importing them

No, FF1.0 won't have any extra maps. Waybe 2.0 will, but that's too early to say. Meanwhile, you can buy lots of high-quality HDRIs from Sachform:
